Pumpkin & Greens Birdie Cake
1 lb. can Pumpkin or Squash
1/2 cup Canola Oil
1/2 cup Honey
2 Bananas
2 Eggs (with shell)
3/4 cup Wheat Germ
1 cup Wheat Bran
1 tsp. Baking Soda
1 cup Corn Meal
4 oz Dried Greens
2 cups Whole Wheat Flour
2 cups White Flour
Add ingredients one at a time into a mixing bowl with mixer running on low. Spray 2 bread pans with cooking spray and pour mixture evenly into both pans. Place in pre-heated 400 F oven and cook for 1 hour. Cool on rack for about 10 minutes then remove from pan and cool completely before serving in 1 to 2 inch squares.
