Gluten Free Sweet Potato Bird Muffins
Ingredients
2 eggs with shell crushed finely in a blender
1/2 cup mashed sweet potato (I prepare this the night before by steaming or boiling until very soft then mashing.)
1/3 cup honey
4 Tbsp melted coconut oil
1 tsp vanilla
3/4 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 teaspoon allspice
2 1/2 cups almond flour
1/2 cup chopped walnuts
1/2 cup raisons or chopped dates
